What's for Breakfast?

I need breakfast inspiration.  Help me.  Give me some of your more unusual, off-the-beaten-path, out-of-the-box breakfast options.  I'm going to start a running list on the sidebar of things I've tried or things you suggest.  I have to eat a good breakfast in the morning, especially these days, but I'm floundering.

Here's what I cooked up this morning:

a healthy scoop of hot, steamed rice
glug of milk
pat of butter
spoonful of brown sugar
sprinkling of dried fruits and nuts (I just used some trail mix stored away in the freezer)
just a pinch of salt

It wasn't bad; I'll keep it in mind for future use.  I plan to use the leftover rice to make some sort of stir-fried breakfast rice, like this one later.

    Peanut butter banana french toast
    Eggs in a hole

    PB banana french toast is one of my fave things, that come to think of it I haven't had in forever...

    Bread, cooked like french toast (scrambled egg, milk, vanilla - soak bread in, etc)
    Spread peanut butter on top
    Then put sliced bananas on top

    It feels a little indulgent, but not super sugary.

    And then another long time fave... Eggs in a hole. Use the biscuit cutter to cut the center out of your bread. Sizzle some butter in a skillet, put in your bread and drop the egg in the hole to fry it and flip. Cook your little circle of bread in butter too, then spread it with honey or jam. One piece is savory, the other sweet.

  2. Oooh, the PB&B french toast sounds very good. We'll give that a try this week. My brother-in-law's family calls your "eggs in a hole", "eggs in a basket".

  3. I haven't had it in years but I grew up eating mostly Brer Rabbit Brown Label Syrup with biscuits or homemade bread and bacon or sausage for breakfast. My oldest brother still thinks it's a staple and part of the Basic Food Group Pyramid. He's been known to drive all over Bryan/College Station to find a store that stocked it and really stocked up on it when he found some. My other older brother says that a certain brand of molasses mixed half-and-half with Karo white syrup makes a good substitute for Brer Rabbit Brown Label if you can't find it in the store. I guess it is hard to find in most stores but I have found several outlets online that sell it. Just remember to get the brown label which is the mildest of the several labels available.

    Pour some in your plate, stir in a few drops of bacon grease, and sop it up with a biscuit or some bread. I've decided I'm going to get some just to see if it is as good as I remember it being.

  5. I love all the traditional breakfast breads, but my favorite is the cinnamon rolls that my mom made from Bisquick.

    To be more healthy, I also enjoy cottage cheese and fruit, nuts, and sometimes oatmeal.

    I also love leftovers (means I don't have to cook) so do you ever do casseroles--potato, egg, etc.

    One final suggestion. Duane made cornbread with ground pork and goat cheese for dinner (to go with chili). I ate it for breakfast the next morning and it was delicious.

    Not very original ideas, but maybe something you don't normally make.
