Whatever Wednesday: Late Again!

We cannot seem to stay well around here.  Just as Graham was getting over his latest cold (the second in a month), I started sneezing and coughing and generally feeling miserable - right around Wednesday.  I'm over the worst now, I think, but still tire easily.

Made a crockpot dinner for Wednesday night, which worked out well since by dinner-fixin' time that day, I was done.  I worked off of a recipe from my Cheap. Fast. Good! cookbook (but there are several similar renditions around the 'net, like this one here), but turned it into a crockpot dish by dumping 1 pound of frozen boneless chicken thighs (because that's what I had), 1 cup of rinsed dry black beans, 1 teaspoon each of onion and garlic powder, 1 teaspoon of chili powder, 1 teaspoon of salt, whatever was left of the barbecue sauce in the bottle (which was close to the 1/3 cup called for in the recipe), and covering the whole mess with enough liquid to submerge the beans plus an inch or so.  That's it.  Let it cook (on low for 8 hours, high for 4 hours).  Shred chicken when done and serve with tortillas, cheese, sour cream, guacamole - whatever you're favorite burrito/taco toppings are.

Graham's had it (minus tortilla) 3 different times this week now.  He loves it.
